They just have good brand names that they enjoy.
Floated an offer in Feb '19, extended the joining date by a week, and then postponed it because the position was no more. Kept hanging for two weeks, and we were without a job. Then, again, extended the same offer in Apr and since then shifted the dates 4 times because some approval is not coming, and the person who has to give it is not replying, even though the job offer is floated.
I hope someday you lose your job without notice and have to cry for it for a year.

Applied online. Got a direct link to schedule an interview with the team. No recruiter involved. System Design: Indepth resume review, design APIs. Coding: 1 coding question, LC Medium. Behavioural: Typical "tell me about a time..."
Group interview with three members of technical staff. Final interview with hiring manager. Mostly general questions about previous projects and experience with specific tech stack. No coding questions. Mostly soft questions.
